Sautéed Collard Greens

Collard greens are a nice hearty green that are rich in folate and calcium. They are great sautéed as a side for any meat, but are especially good with pork chops or breakfast patties. 

This recipe is from my cookbook, Wandering Palate.


Servings: 2
Prep Time: 10 minutes
Cook Time: 7-10 minutes


Ingredients

1 bunch collard greens (use code TRAILTOHEALTH for 50% off your 1st box of produce)
1 tablespoon coconut oil or butter  
1 teaspoon garlic powder  
salt, to taste 


Directions

1. Remove and discard the stems and center ribs of the collard greens. Cut the leaves into 1-inch pieces. (Code TRAIL gets you 10% off Nakano Knives) 

2. Heat the coconut oil or butter in a large skillet set over medium heat. Add the garlic powder followed by the collard greens; stir until tender, about 7-10 minutes.  

3. Season with salt to taste and serve immediately.
